Because they usually come in much smaller packages, you can purchase it and experiment with foods and not feel too guilty if you end up not liking it. Pancake mix, for me, is one of those foods. I’m excited to try this recipe but I will keep this secret ingredient a secret from my family to see their reaction LOL Plus a quick google search of recipes that use pancake batter offers a plethora of additional recipe options to choose from.

Found out in the most uncomfortable way – ate an omelet and within the hour, while shopping, went running to the rest room – I am gluten sensitive and didn’t know they added pancake batter. Now I don’t even want to step inside their restaurant. Cross contamination is bad enough, but to not know it is actually being added to your food without a clear statement about it, that’s just not right.

Please log in or create a free account to comment.Pat, it is tough to break down the exact amount if you are making homemade mix, because you’re only using 1/3 cup of all the ingredients combined. You could try adding a bit of flour and a splash of milk to the egg mixture – maybe 1/4 cup flour and 2 tablespoons of milk for the 3 eggs. I think you will just have to experiment to get the right amount.

You could always make up a batch of the dry ingredients only of your favourite recipe then use 1/2 cup of that. With or without the sugar. Then save the rest of the batter for the next time you make an omelet.

Then when we got to the restaurant I saw it in very fine print in the omelet section that they had the batter in them. I was so glad I was paying attention. Fast forward a couple of years and I was having allergy tests done. I asked for gluten to be included in the blood tests. I hadn’t eaten it for a couple of years but had to eat it for two weeks to be tested for the antibodies. Turned out I wasn’t allergic, as my doctor thought, I was sensitive to gluten. The allergist said that it didn’t bother me when I ate it thise two weeks because going a year or two without a food we’re sensitive to resets the system and stops the sensitivity. Who knew? Now I can enjoy those omelets and wanted to share in case that might help someone else.

I was very thankful we eventually found out due to his diabetes. I personally feel IHOP should make is clear on their menu that the omelet contains pancake batter.

But I was frustrated years ago to learn that they were doing this to make their omelettes look bigger, when there was NO mention of pancake mix on the omelette menu description! Just eggs, cheese, veggies! That is when I quit eating there. What if someone had been allergic to wheat? I felt it was dishonest. That said, I am more of a purist when it comes to food, but my way isn’t for everyone, but this brings back memories for me!

I was just wondering if this recipe would work using a gluten free pancake mix. I think they also carry them in the shake and pour versions.
